FIELD: food industry. ^ SUBSTANCE: invention relates to technology used to produce coffee substitutes. Method provides for preparation of formula components, yacon cutting, drying in microwave field at specified parametres of the process and frying. Afterwards lemon pulp is dried in microwave field at specified parametres of the process, and lemon pulp additional convective drying is carried out. Further listed components are mixed, and produced mix is cryo-ground in liquid nitrogen. ^ EFFECT: method makes it possible to produce new coffee drink from non-traditional raw materials according to wasteless technology. |
