<P>PROBLEM TO BE SOLVED: To provide a foaming emulsified oil-and-fat composition for cake with which cake having unconventionally coarse texture can be easily obtained: to provide cake using the composition; and to provide a method for producing the cake. <P>SOLUTION: The foaming emulsified oil-and-fat composition for cake has the following structure: the whole of the foaming emulsified oil-and-fat composition for cake includes 5-40 wt.% of edible oil and fat, 3-10 wt.% of polyglyceryl fatty acid ester having HLB 6 or more, and 2-8 wt.% of glycerin fatty acid ester; and ≥50% of the polyglyceryl fatty acid ester having a polymerization degree of 10 includes decaglycerin monostearine acid ester. The cake is obtained by using the foaming emulsified oil-and-fat composition for cake and includes 10 or more of air bubbles having the longest diameter of ≥1,500 μm in an area of 400 mm<SP>2</SP>according to observation with a scanner. Alternatively, the cake has ≤250 (pieces/cm<SP>2</SP>) of the number of the air bubbles according to air bubble analysis using an image analysis software (Image J), and has the average area of the air bubbles is ≥0.15 mm<SP>2</SP>. <P>COPYRIGHT: (C)2010,JPO&INPIT |
