FIELD: food industry. ^ SUBSTANCE: invention relates to technology used to produce coffee substitutes. Drink is produced by extraction of cinnamon with liquid nitrogen to separate according miscella, preparation and cutting of yacon and apples, their drying in microwave field down to residual moisture of around 20% with microwave field capacity providing for raw materials heating until the temperature inside pieces reaches 80-90C, for at least 1 hour. Yacon is fried. Apples are additionally dried down to residual moisture of around 5% by convective method. Yacon and apples are mixed in mass ratio of 3:2. Then produced mix is impregnated with separated miscella with simultaneous increase of pressure, pressure is reduced down to atmospheric one, simultaneously mix is frozen and cryo-ground in medium of released nitrogen. ^ EFFECT: method makes it possible to produce flavoured coffee drink with improved organoleptic properties and their preservation. |
