FIELD: food industry. ^ SUBSTANCE: invention relates to technology used to produce coffee substitutes. Method provides for extraction of fennel with liquid nitrogen to separate according miscella. Then girasol-sunflower is cut, dried in microwave field at specified parametres of the process and fried, barley malt is fried. Afterwards girasol-sunflower and barley grain are mixed. Then produced mix is impregnated with separated miscella with simultaneous increase of pressure, pressure is reduced down to atmospheric one, simultaneously mix is frozen and cryo-ground in medium of released nitrogen. ^ EFFECT: method makes it possible to eliminate wastes production. |
