FIELD: food industry. ^ SUBSTANCE: invention relates to technology used to produce coffee substitutes. Method provides for extraction of medang with liquid nitrogen to separate according miscella. Then cutting, drying is carried out in microwave field at specified parametres of the process. Afterwards girasol-sunflower and barley grain are fried. Further girasol-sunflower and barley malt are mixed. Then produced mix is impregnated with separated miscella with simultaneous increase of pressure, pressure is reduced down to atmospheric one, simultaneously mix is frozen and cryo-ground in medium of released nitrogen. ^ EFFECT: method makes it possible to eliminate wastes production. |
