<P>PROBLEM TO BE SOLVED: To provide a method for producing a fermented milk beverage sufficiently suppressing aggregation and precipitation, efficiently and easily producing fermented milk excellent in long preservation stability, and suitable for a beverage for normal temperature distribution. <P>SOLUTION: The method for producing a fermented milk beverage comprises the following process: a process (A) of preparing raw fermentation material X containing whey hydrolyzed substance obtained by enzymatic hydrolysis of whey, having 1.0-4.0 mass% of a content rate of the whey hydrolyzed substance, and ≤1.70 of a mass ratio of an amount of the whey hydrolyzed substance in an amount of casein in the milk (an amount of whey hydrolyzed substance/an amount of casein in the milk); a process B of fermenting the raw fermentation material X via lactobacillus; and a process C of subjecting the obtained fermented milk to homogenization treatment. <P>COPYRIGHT: (C)2007,JPO&INPIT |
