<P>PROBLEM TO BE SOLVED: To provide cooking oil and fat for reducing influence on environmental load owing to reduction in wasted oil and fat, in particular, leading to further expansion of utilization of palm-based oil and fat by solving the problem of deterioration in color due to heating oil and fat such as palm-based oil and fat in use for cooking. <P>SOLUTION: The cooking oil and fat contains 2-30 ppm of a water-soluble calcium compound, wherein the water-soluble calcium compound uses organic acid calcium and the oil and fat uses palm-based oil and fat. <P>COPYRIGHT: (C)2010,JPO&INPIT |
