FOOD/PET ANIMAL FOOD MATERIAL HAVING HEALTH FUNCTIONALITY AND LIKING-IMPROVING EFFECT WITH COLLAGEN AS RAW MATERIAL

PROBLEM TO BE SOLVED: To provide a food/pet animal food material having health function- and liking-improving effects with collagen as raw material.

SOLUTION: The food/pet animal food material is obtained by treating a raw material including collagen with a protease such as papain followed by adding a reducing sugar such as xylose and then heating to cause a Maillard reaction. By the above process, the objective food/pet animal food having health function owing to anti-oxidizing effect and having high liking tendency as well can be prepared.
