<P>PROBLEM TO BE SOLVED: To provide a quality evaluating apparatus capable of quantitatively evaluating a change in the quality of an object to be examined due to its decay and fermentation. <P>SOLUTION: The quality evaluating apparatus includes: electrodes 11 which are inserted into a solution of the object to be examined; a voltage applying/current measuring section 12 which detects current flowing between the electrodes 11 through the solution while keeping a voltage applied across the electrodes 11 constant; an applied voltage commanding section 13 which commands about the voltage applied across the electrodes 11; an electrochemical parameter calculating section 14 which calculates an electrochemical parameter of the object to be examined, based on the measured current; an evaluation profile creating section 15 which creates an evaluation profile from a set of calculated electrochemical parameters; a reference profile accumulating section 16 which accumulates the evaluation profile as a reference profile; and a quality evaluating section 17 which evaluates the quality of the object to be examined, based on the evaluation profile and a chosen reference profile. <P>COPYRIGHT: (C)2010,JPO&INPIT |
