PROBLEM TO BE SOLVED: To provide a polyglycerol fatty acid ester used for a medicine or cosmetic, having high hydrophilicity, excellent in emulsifying property and solubilizing property, and widely improved with taste. SOLUTION: This polyglycerol fatty acid ester synthesized by using a polyglycerol without containing glycerol and containing≤3 mass% diglycerol content, and further the polyglycerol having≤20% content of materials having the low degree of polymerization at or less than that of triglycerol is found out to have the high hydrophilicity, excellent emulsifying property and solubilizing property, and the widely improved taste, and to obtain the polyglycerol fatty acid ester for the medicinal or cosmetic use. Also the degree of the highly hydrophilic property of these polyglycerol fatty acid ester is found out that it can become a highly hydrophilic emulsifying agent or solubilizing agent having≥15 HLB.
