The invention relates to a process for producing lactic acid by fermentation of a sugarcane extract by means of microorganisms belonging to the Bacillus or Sporolactobacillus genus. The fermentation medium is self-sufficient. The process may comprise at least one purification step. The lactic acid produced is heat-stable and is of a particularly high purity.
