The invention relates to a method for maturing a wine (32) contained in a container (30) and has a gaseous phase referred to as the sky (36) mounted thereon, said container comprising means (38) for injecting a gaseous phase into said wine (32) or a liquid phase and a circuit (40) which extends from at least one sampling point (42) at sky level (36) to said injection means (38) in the liquid phase, as well as means (44) for the forced circulation of the gaseous phase between said sampling point (42) and said injection means (38), characterised in that said method consists of feeding an inert gas into the container (30) in order to reduce the residual oxygen level in the sky (36), recirculating the gaseous phase of the sky (36) via the forced circulation means (44) through the liquid phase so as to establish a forced balance between the gaseous phase and the liquid phase contained in the container (30), feeding oxygen into the container, and recirculating the gaseous phase of the sky (36) via the forced circulation means (44) through the liquid phase in order to retain a substantially constant residual oxygen level in the sky. |
