A citric acid ester supplement for shortening compositions (see Division A2) is prepared by reacting anhydrous citric acid with fatty acid partial glycerides, preferably mixed with a saturated monohydric alcohol having 12 to 24 carbon atoms per molecule, at temperatures between 145 DEG and 165 DEG C., in an inert atmosphere e.g. a stream of nitrogen, and under such conditions, e.g. reduced pressure, that the water produced is removed as vapour and all the carboxyl groups are esterified, the molar ratio of citric acid to the other ractants ranging from 1 : 2.7 to 1 : 3.3 and preferably being 1 : 3. The partial glycerides may be monoglycerides, e.g. comprising glycerol monostearate, or mixtures of monoglycerides and diglycerides such as those of natural or hydrogenated cottonseed oil, soybean oil, coconut oil and palm oil.
