<P>PROBLEM TO BE SOLVED: To provide an additive for dough which includes a naturally occurring active ingredient and effectively improves food characteristics, and a method using the same. <P>SOLUTION: The additive for dough includes a water extract of hop. The additive for dough may be added to dough together with yeast. The method uses the water extract of hop as an active ingredient of the additive for dough. In this method, dough in which the additive for dough containing the water extract of hop is added, is produced.
