Lactose-positive recombinant leuconostoc strain

Provided is the use of a lactose-positive Leuconostoc carnosum strain comprising genes encoding: a lactose transporter and a beta-galactosidase or beta-glucosidase in the production of a milk product. Further provided are corresponding isolated bacterial strains, starter cultures and milk products containing the strain and methods of producing milk products using the strains as well as products produced using the strains.
