FIELD: food industry. ^ SUBSTANCE: invention is related to coffee substitutes production technology and represents manufacturing method of yacon-cereals beverage. Recipe components are prepared. Yacon is cut, dried in microwave field at preset process parametres and roasted. Oats grain is roasted. The above mentioned ingredients are mixed and the obtained mixture is cryomilled in liquid nitrogen. ^ EFFECT: method enables to produce new coffee drink out of unconventional raw materials with improved organoleptic properties owing to enrichment of the drink with extractive substances and preserve them in the course of preparation. |
