<P>PROBLEM TO BE SOLVED: To keep the production cost low and to increase the ratio of the amount of extracted ethanol. Ž<P>SOLUTION: There is provided a method of producing ethanol including a process of producing a raw material for extracting ethanol by feeding a food residue into a fermentation device 1 and fermenting the food residue while continuously heating and transferring the same, a saccharification process comprising charging the raw material into a saccharification tank 2, adding water thereinto to prepare the mash-like saccharified raw material, subsequently adding a saccharification enzyme thereinto, heating the mass, and subsequently cooling the mass, a heating/fermenting process of heating/fermenting the saccharified raw material in a fermentation tank 4 adding yeast thereinto, a liquid extraction process of extracting a liquid from the raw material having been fermented using a press 5, a process of generating vapor by heating the extracted liquid with steam using a distillation device 6, and a cooling process of cooling the vapor using a cooling tank 7.
