PURPOSE: Imitation cheese containing Salicornia herbacea and a manufacturing method thereof are provided to prevent adjust diseases and fatness by manufacturing the imitation chesses containing various kinds of nutrients such as minerals etc. CONSTITUTION: A manufacturing method of imitation cheeses containing Salicornia herbacea includes a step for mixing additives 10 ~ 25 parts by weight including vegetable oil 55 ~ 75 parts by weight, emulsifier 5 ~ 7 parts by weight, water 240 ~ 320 parts by weight, and beneficial composition of Salicornia herbacea based on casein 100 parts by weight and a step for agitating a mixture in a mixer; solidifying the mixture in -4 ~ -6°C. The imitation cheese further includes fresh cream 50 ~ 80 parts by weight and sweet whey powder 1 ~ 5 parts by weight based on the casein 100 parts by weight. The imitation cheese includes citric acid, carrageenan, or guar gum.
