<P>PROBLEM TO BE SOLVED: To provide an edible sheet jelly for a frozen dessert as material used in combination when making frozen confectionery products such as ice cream, to provide a method for producing the sheet jelly, and to provide frozen dessert making an eater enjoy the palate feeling of jelly having a novel appearance, shape, and feeling. <P>SOLUTION: The method for making flexibly-usable edible sheet jelly for frozen dessert includes: preparing main raw material such as sugar, and a gelling agent solution; pouring the mixture into a cooling tray at a prescribed temperature so as to be formed into a sheet jelly with a desired thickness; and cutting the solidified jelly into pieces each with an appropriate size. The sheet jelly contains, as a gelling agent or gum, at least one of carrageenan, Gellan gum, native Gellan gum, locust bean gum, xanthan gum, guar gum, tamarind gum, pullulan, gelatine, agar, furcelleran, aleginic acid, starch, glucomannan, curdlan, tara gum, karaya gum, gum arabic, pectin or a cellulose derivative.
