PURPOSE: A method of manufacturing fermentation sauce using mulberry tree and mulberry leaves is provided to manufacture the fermentation sauce by heating and aging the mulberry tree, the mulberry leaves, sugar, and white starch syrup etc. CONSTITUTION: A method of manufacturing fermentation sauce using mulberry tree and mulberry leaves comprises the following steps: washing the cut mulberry tree and the mulberry leaves in water; drying the cut materials in the shade; aging the dried mulberry tree and the mulberry leaves in a sealed jar with white sugar 25kg and unrefined sugar 10 kg for 5 month or more; mixing the aged mulberry tree and the mulberry leaves with corn syrup 30kg and raw water 15 kg; filtering the mulberry tree and the mulberry leaves after boiling mixtures in 80°C, 60 minutes and in 40°C, 20 minutes; cooling the mixtures; and aging the cooled first sauce in a jar for 10 days.
