PURPOSE: A method for preparing a food containing chicken foot as a main ingredient is provided to remove the specific bad smell from a chicken foot. CONSTITUTION: A method for preparing a food containing chicken foot as a main ingredient comprises the following steps of: washing a chicken foot, and removing inedible portions from it; boiling the chicken foot in water where chopped ginger is mixed; cooling off the chicken foot; mixing the chicken foot together with a seasoning containing red pepper paste, red pepper powder, sugar, malt, soy sauce, chopped garlic, chopped onion, chopped ginger, ground pepper, and food pigment; freezing the chicken foot at 1~5°C for 6-12 hours; steaming it at 200~250°C for 10-20 minutes; roasting it for 30-60 seconds; packing the chicken foot; fast-freezing it at the temperature of -15~-20°C; and keeping it at -15~-20°C for 40-60 hours. |
