In the production of chocolate products, the cocoa component composition containing cocoa butter is ground while in a flowable condition, optionally subjected to ultrasonic treatment, and then mixed with other separately ground components of the chocolate products, such as powdered milk or sugar, which are preferably ground in an oxygen-free atmosphere while in a pneumatically conveyable state. These may then be plasticized and subjected to ultrasonic treatment, as described in Specification 930,981. The grinding may be effected in a colloid mill. |
