<P>PROBLEM TO BE SOLVED: To provide a noodle-cutting device facilitating the uniform cutting of noodles at a desired width by regulating the upward moving position of a knife, and enabling the cutting of the noodles to be finished rapidly in good appearance by improving a device for cutting noodle dough by only moving the knife in the upper and lower direction. Ž<P>SOLUTION: The noodle-cutting device equipped with a base plate, the knife engaged with a rail installed along the front side of the base plate through a cam wheel, and a sending means for horizontally moving the cam wheel by the upward movement of the knife from a downward moved position of having cut the dough on the base plate is obtained by installing a bar for restricting the upward moving angle of the knife in the upper part of the base plate. As a result, the width of the noodle is settled by only changing the height of the bar to facilitate the regulation thereof. The bar is spanned between poles stood on arm fragments installed in both side parts of the base plate.
