AMMODYTES PERSONATUS SAUCE CONTAINING HEALTHFUL AND BENEFICIAL BLACK GARLIC AND A MANUFACTURING METHOD THEREOF

PURPOSE: Ammodytes personatus sauce containing black garlic and a manufacturing method thereof are provided to preserve the Ammodytes personatus sauce for a long time, and to improve beneficial effects of the sauce with black garlic components. CONSTITUTION: A manufacturing method of Ammodytes personatus sauce comprises the following steps: washing and dehydrating Ammodytes personatus(s100); aging the Ammodytes personatus and bay salt in constant temperature for a specified period(s200); removing floating fat after sieving solids; making black garlic extract after concentrating black garlic; mixing anchovy sand lance liquid 90% ~ 98%, the black garlic, and the black garlic extract 1% ~ 5%; filtering mixed liquid; heating the filtered liquid in temperature of 80 ~ 110 degrees; and cooling the heated liquid in temperature of 5 ~ 15 degrees.
