<P>PROBLEM TO BE SOLVED: To provide a method for producing cut bean curd further suppressed in a state of pores occurring in a boiling and cooling process. <P>SOLUTION: This method for producing the cut bean curd includes: a process of preparing bean curd by adding an oil-in-water emulsified oil and fat composition containing oil and fat, saccharide, and an emulsifier to soymilk, and adding a coagulating agent to the product to coagulate the soymilk; and a process of cutting the bean curd followed by sealing in a container, and heating and cooling the cut bean curd together with the container. <P>COPYRIGHT: (C)2010,JPO&INPIT |
