PURPOSE: A manufacturing method of coffee creamers using whole soybean curd is provided to manufacture the coffee creamers satisfying nature-oriented inclination and health-oriented inclination by mixing soybean, coffee powder contained in whole soybean curd paste, sucralose, sugar ester and purified water. CONSTITUTION: A manufacturing method of coffee creamers using whole soybean curd comprises the following steps: manufacturing emulsion by vacuum de-foaming purified water and sugar ester after mixing the purified water and the sugar ester in a homogenizer; mixing the emulsion, instant coffee powder 0.5 ~ 2.5 weight%, soybean curd paste 5 ~ 25 weight%, and saccharides 0.01 ~ 10 weight%; heating materials; and sterilizing the materials with a high temperature short time pasteurization and a ultra-high temperature sterilization processes. The content of the sugar ester is 0.01 ~ 2 weight% based on the weight of the emulsion. |
