Method provides for preparing recipe ingredients, cutting chicory, drying it in the microwave field at preset process parametres, roasting and milling chicory, roasting barley grain and rye grain, mixing chicory with barley grain and rye grain in the mass ratio 2:2:1, extracting the obtained mixture by drinking water at preset process parametres, filtering the obtained extract, preparing a syrup out of the extract, packing cherry-plums and the syrup, sealing and sterilising. ^ EFFECT: invention enables to produce compote with coffee flavour and aroma tones without actual coffee content, simplify the technology and reduce the number of boiled fruit in the target product without reducing the product shelf life. ^ 1 tbl
