FIELD: food industry. ^ SUBSTANCE: invention relates to food industry, namely to technology of coffee substitutes production. Method involves preparing recipe ingredients, extracting nutmeg blossoms with liquid nitrogen with corresponding miscella separation, cutting yacon, drying it in a microwave field at preset process parametres and roasting it. It is then impregnated by separated miscella with simultaneous pressure boost and depressurisation till atmosphere pressure with simultaneous freezing of yacon and its cryomilling in medium of evolved nitrogen. ^ EFFECT: method enables to produce new flavoured coffee drink out of unconventional raw material according to nonwaste technology. |
