FIELD: food industry. ^ SUBSTANCE: invention is related to food industry, namely to technology of coffee substitutes production. Method provides for preparation of recipe ingredients, extraction of vanilla by liquid nitrogen with corresponding miscella separation, cutting of yacon, drying it in microwave field till residual moisture content is about 20% at microwave field power providing warming of yacon inside the bits to 80-90C for 1 hour minimum, roasting, impregnation by separated miscella is performed with simultaneous pressure boost and depressurisation till atmosphere pressure with simultaneous freezing of yacon and its cryomilling in medium of evolved nitrogen. ^ EFFECT: method enables to produce new flavoured coffee drink out of unconventional raw material according to nonwaste technology. |
