FIELD: food industry. ^ SUBSTANCE: invention relates to technology of manufacturing coffee substitutes. Method provides for extraction of basil by liquid nitrogen with corresponding miscella separation. Then yacon is cut and dried in the microwave field at preset process parametres. Whereupon it is roasted and impregnated by separated miscella with simultaneous pressure boost and depressurisation till atmosphere pressure with simultaneous freezing of yacon and its cryomilling in medium of evolved nitrogen. ^ EFFECT: method ensures no waste generation. |
