Epitopes related to coeliac disease

Disclosed are epitopes useful in methods of diagnosing, treating, and preventing coeliac disease. The epitopes are selected from the group consisting of transglutaminase-deamidated SEQ ID NOs: 1787-1829 and functional equivalents thereof. Also disclosed are mutant gluten proteins modified by a transglutaminase, and plants and foods expressing these mutant proteins.
