<P>PROBLEM TO BE SOLVED: To provide new β-glucan-containing gel usable as a food material, and to provide a method for producing the β-glucan-containing gel. <P>SOLUTION: The method for producing the β-glucan-containing gel includes a heating process of heating a mixture containing β-1,3-1,4-glucan and water at 40-100°C. The weight-average molecular weight of β-1,3-1,4-glucan contained in the mixture is ≥200,000 Da.
