<P>PROBLEM TO BE SOLVED: To provide a method for producing an unroasted bean by which roasting can be carried out without accompanying much smoke or dust, and a peculiar odor so as not to deteriorate a flavor of coffee even by individual consumers, and a longer preservation period of time is secured. Ž<P>SOLUTION: The method for producing the unroasted bean includes heating a raw coffee bean, and thereby affording the unroasted bean. Heating of the raw coffee bean is started, and a state wherein the heating is stopped is maintained in the end period for evaporating moisture in the raw coffee bean.
