<P>PROBLEM TO BE SOLVED: To provide a composite processing preparation for octopus used in preprocessing carried out before steaming and boiling frozen octopus, and simultaneously exerting both of slime-removing effect and anti-oxidation effect each owing to alum so that the octopus obtained after steamed and boiled develops vivid red color without getting whitish. <P>SOLUTION: The composite processing preparation for octopus includes: a processing component containing erythorbic acid, ascorbic acid or alkaline metal salt thereof, or a mixture of at least two kinds of them; a sulfurous acid component containing at least one of sodium pyrosulfite and sulfurous acid sodium; and alum for acidification. The composite processing preparation for octopus is prepared so that the content of the sulfurous acid component in the whole of the preparation accounts for 5-20 wt.%, the ratio of the processing component to the whole of the preparation accounts for 20-56 wt.%, and the preparation used as a 0.5 wt.% aqueous solution has pH 3.0-5.0. <P>COPYRIGHT: (C)2010,JPO&INPIT |
