<P>PROBLEM TO BE SOLVED: To provide a device for producing black garlic with which raw garlic is favorably fermented and turns black to produce black garlic in large quantity. <P>SOLUTION: The device for producing black garlic includes a device body 1 which has an opening/closing door and in the inner part of which a fermentation chamber S is formed. The inner periphery of the fermentation chamber S of the device body 1 is formed of wood panels. In the fermentation chamber S, a plurality of electrically heating counters 9, 9, 9 each having a far-infrared heater 9a are longitudinally disposed at intervals, a plurality of temperature sensors 13, 13, 13 are longitudinally disposed at intervals, and a control device 17 controlling power distribution to the far-infrared heater 9a based on detection signals from the temperature sensors 13, 13, 13 to maintain the inside of the fermentation chamber S to have a prescribed temperature. <P>COPYRIGHT: (C)2010,JPO&INPIT |
