<P>PROBLEM TO BE SOLVED: To provide a method for producing plant extract having enhanced refreshing sweetness and body taste, and also having fresh flavor with less impure taste and free from unpleasantness. <P>SOLUTION: The method for producing plant extract comprises: mixing plant raw material with water; heating the mixture followed by cooling the heated mixture; and adding enzyme to the cooled mixture to extract the mixture while allowing the enzyme to act on the mixture. <P>COPYRIGHT: (C)2010,JPO&INPIT |
