FIELD: food industry. ^ SUBSTANCE: invention is related to food industry, namely to technology of coffee substitutes production. Method provides for preparation of recipe components, extraction of basil by liquid nitrogen with corresponding miscella separation, girasol cutting, drying it in microwave field at preset process parametres and frying, cutting rosehips, drying them in microwave field at preset process parametres and drying them up by convective method, frying of barley grain, acorns, nut kernels, kernels of fruit pits and soya. Then girasol is mixed with rosehips, barley grain, acorns, kernels of nuts and fruit pits and soya, the obtained mixture is impregnated by separated miscella with simultaneous pressure boost and depressurisation till atmosphere pressure with simultaneous freezing of mixture and its cryomilling in medium of evolved nitrogen are performed. ^ EFFECT: method enables to obtain new flavoured coffee drink according to nonwaste technology. |
