Device (1) comprises at least one reaction container (3) having an inlet (23) for the supply of at least one type of biological substrate and an outlet (34) for the removal of residual substrate, and a line (31) for the removal of biogas. The reaction container and/or its inlet and/or its outlet exhibits at least one further outlet line to transfer at least a portion of the substrate for removing fiber fractions, preferably for pulp removal. An independent claim is also included for operating the device for the fermentation of biological substrates to biogas and residual substrate, comprising extracting fiber fractions and/or pulp from at least a part of the substrate during the fermentation process.
