<P>PROBLEM TO BE SOLVED: To provide a konjak processed food suppressed in konjak smell without losing springy palate feeling peculiar to the konjak, eatable as it is, enhanced in health promoting function, and containing granular fish and shellfish roe: and to provide a method for producing the food. <P>SOLUTION: The konjak processed food 1 comprises food obtained by seasoning konjak 12 containing granular fish and shellfish roe 14 with seasoning liquid 2. The food is produced by: swelling a mixture obtained by mixing konjak powder, red pepper powder 16, lactosucrose, fish and shellfish roe 14, and water and stirring the mixture, in a refrigerator; adding a coagulator to the swollen mixture; stirring the mixture; heating the stirred mixture with hot water followed by putting the mixture into normal-temperature water or cold water to be cooled; hermetically putting the thus-treated mixture in a container 3 together with the seasoning liquid 2 to which either of the powder, ingredients or extract of red pepper is added; hermetically sealing the container; heating the mixture with the hermetically sealed container in 80-85°C hot water for 25-35 min to make the seasoning liquid 2 infiltrate to the mixture and sterilize the mixture: and thereafter cooling the mixture in cool water to roughly remove the heat from the mixture. <P>COPYRIGHT: (C)2010,JPO&INPIT |
