<p><P>PROBLEM TO BE SOLVED: To provide a method for simply and effectively restraining the caving of foods, to provide a caving restrainer usable for the method, to provide a production method of foods, hardly causing the caving, and to provide a premix capable of producing foods hardly causing the caving. <P>SOLUTION: There are provided the caving restrainer comprising a composition containing a lipase-treated product of a 14-18C linear fatty acid or oil and fat, dough or a premix added with the caving restrainer and a production method of foods, using the dough or the premix. <P>COPYRIGHT: (C)2010,JPO&INPIT</p> |
