A process for preparing uricase comprises immersing uricase-containing yeast cells in a first aqueous solution of an inorganic salt or salts of ionic strength greater than 2 and pH 3 to 8 at a temperature below 15‹ C. and then extracting the cells with a second aqueous solution of an inorganic or organic salt or salts of ionic strength less than 1 and pH 7 to 11 at a temperature below 15‹ C. The yeast may be Candida utilis; it may be induced to produce uricase by adding glucose and uric acid to the culture medium. The salts used in the two solutions may be the same or different and may be ammonium or sodium sulphate; ammonium, sodium, potassium, calcium or magnesium chloride; ammonium or sodium dihydrogen phosphate; or diammonium or disodium hydrogen phosphate. The second solution may merely be the product of dilution of the first with adjustment of pH or the yeast cells may be water-washed between the two treatments. The uricase may finally be salted out.
