Avian cartilage hydrolyzate comprises hydrolyzed type II collagen (45-70 wt.%), chondroitin sulfate (9-15 wt.%), hyaluronic acid (0.5-2 wt.%) and amino acids such as valine (2.7-3.3%), isoleucine (2-2.4%), phenylalanine (2.2-2.6%), lysine (3.8-4.2), tryptophan (0.4-0.6), hydroxyproline (5.5-8.7%) and thydroxylysine (0.7-1.8%), where the molar ratio hydroxyproline and hydroxylysine is 5-8 and the average molecular weight of the peptidic fraction is 500-1000 Daltons. An independent claim is included for the preparation of the avian cartilage hydrolyzate, comprising providing raw material consisting of 70-100 wt.% of bones and (sternal) cartilage and 0-30 wt.% of sternum cartilage, mixing the raw material with an aqueous solution of pH 5.5-7.5, hydrolyzing the obtained mixture with a proteolytic enzyme for 1-2 hours at 65-75[deg]C, inactivating the proteolytic enzyme for 10-20 minutes at >=85[deg]C, filtering the reaction mixture containing the hydrolyzate, concentrating the reaction mixture, sterilizing the reaction mixture at about 130[deg]C for >=30 seconds and drying the mixture to obtain the hydrolyzate in powder form.
