PROBLEM TO BE SOLVED: To provide an enzyme-treated coffee extract that neither precipitates nor becomes turbid by heating for sterilization and packing in the manufacture of coffee beverage when coffee beans are extracted at <100°C, an enzyme-treated coffee liquid and a method for producing a coffee beverage containing the same. SOLUTION: The method for producing an enzyme-treated coffee extract includes a step for extracting coffee beans with a liquid containing a phytic acid-decomposing enzyme. The method for producing an enzyme-treated coffee liquid includes a step for treating a coffee extract with a phytic acid-decomposing enzyme.
