摘要 FIELD: food industry. ^ SUBSTANCE: method provides for mixing up cardamom seeds and hops, extracting the obtained mixture using liquid nitrogen with corresponding miscella separation, cutting, drying in a microwave field at given process parametres and roasting yacon tubers, mixing up the yacon with malt, impregnating the obtained mixture with the separated miscella while simultaneously increasing the pressure, then relieving the pressure to the atmospheric one and simultaneously freezing the mixture, subjecting the mixture to cryogenic grinding in the environment of released nitrogen, pouring with potable water and saccharifying so as to obtain a wort, introducing brewing yeasts into the wort, primary fermentation, alcoholisation, secondary fermentation and filtration of the beer. ^ EFFECT: method enables to reduce the duration of the process and to increase the foam stability of the target product.
