摘要 |
A method for producing a structurized paste-like product includes mixing cheese with fat component, melting salt and melting the mixture under the temperature 85-90 °C during 10-15 min. Nonfat lactic cheese is used as cheese with addition of flavoring supplements, dry skimmed milk. As fat component coconut fat and refined deodorized sunflower oil are used in ratio 1:2. As melting salt sodium citrate in water solution is used. For fixation of the produced texture a prepared water solution of furcellaran is used as a structure-forming agent. |
