摘要 The invention relates to the method for obtainment of at least one product of microbiological metabolism, which is selected from organic mono-, di- and tricarboxylic acids, which, if necessary, contain hydroxyl groups and which contain also from 3 to 10 carbon atoms, proteinogenous and non-proteinogenous amino acids, purine bases, pyrimidine bases, nucleosides, nucleotides, lipids, saturated and unsaturated fatty acids, diols, containing from 3 to 10 carbon atoms, polyatomic alcohols, containing 3 or more hydroxyl groups, long-chain alcohols, containing at least, 4 carbon atoms, carbohydrates, aromatic compounds, vitamins, provitamins, cofactors, nutraceutical products, proteins, carotenoids, ketones, containing from 3 to 10 carbon atoms, lactones, biopolymers and cyclodextrins, by microbiological fermentation from sugars, which comprises: preparation of sugar-containing liquid medium from starch source, which is selected from seeds of cereal crops, at that the content of monosaccharides in sugar-containing liquid medium is more than 20 wt.%, and moreover it contains at least 20 wt.% of total amount of solid components of starch source, which do not contain starch; fermentation for preparation of metabolite(s) in the presence of sugar-containing liquid medium and depletion or isolation of at least one metabolite from fermentative broth, at that the strain of microorganism, producing desired metabolite(s), is cultivated in sugar-containing liquid medium, which is prepared by means of: dry grinding of starch source, and exhaustion of grinded starch in aqueous medium in the presence of at least one enzyme, splitting starch, and subsequent sugaring with using at least one saccharifying enzyme, at that during exhaustion at least 40 % of grinded material is added continuously or regularly in aqueous medium, and at that exhaustion is realized at least partly at the temperature higher than the gelation temperature of used starch, and at least 25 wt.% of total amount of material, which is added during exhaustion, is supplied at the temperature higher than the gelation temperature of starch, which is contained in the grinded product. The invention also relates to the protein composition, that is obtained according to the method and that is useful as a feedstuff or feed supplement.
