FIELD: food industry. ^ SUBSTANCE: invention relates to the process of producing coffee substitutes. The method provides for preparing the formula components, extracting dill seeds using liquid nitrogen with correspondent miscella separation, cutting, drying in a microwave field at given process parametres and roasting chicory roots, roasting acorns, mixing up the chicory roots with acorns, impregnating the obtained mixture with the separated miscella while simultaneously increasing the pressure, then relieving the pressure to the atmospheric one, simultaneously freezing the mixture and subjecting it to cryogenic grinding in the environment of released nitrogen. ^ EFFECT: method enables to improve of the organoleptic properties of the target product and to avoid generating waste. ^ 1 ex |
