摘要 The present invention relates to a method of manufacture of roasted chicory and to the resulting roasted product. Non-roasted chicory is impregnated with an aqueous solution comprising divalent cations, prior to roasting. The product is suitable for use in coffee compositions. The method is particularly suitable for reducing acrylamide formation during the roasting process.
