PURPOSE: A method for making ginseng chicken soup(Samgyetang) using a chicken and abalone is provided to maintain original flavor and taste of the ginseng chicken soup and ensure an effect of strengthening health. CONSTITUTION: A method for making ginseng chicken soup(Samgyetang) comprises: a step of boiling 3-7g of ginger, 3-7g of garlic, 1-3g of onion skin in 0.3-0.7L of water for 5-15 minutes; a step of boiling 300-500g of chicken for 10 minutes; a step of warming up 1-3g of garlic, 1-3g of root of scallion, 1-3g of Glycyrrhiza uralensis, 1-3g of Kalopanax pictus, 1-3g of Ligustrum japonicum, 1-3g of Astragalus membranaceus, 80-120g of chicken bone and chicken toes in 0.3-0.7L of water to prepare chicken broth concentrate; a step of warming up 1-5g of Glycyrrhiza uralensis, 1-5g of Cervi cornu, 1-5g of Angelica sinensis, 1-5g of Polygonatum odoratum, 1-5g of Acanthopanax sessiliflorus, 1-5g of Asparagus cochinchinensis, 1-5g of Polygonum multiflorum in 0.3-0.7L of water for 3-7 hours to prepare herbal concentrate; a step of boiling 3-7g of 5-6 years old dry ginseng for 60-84 hours to obtain red ginseng concentrate; and a step of adding 60-100g of abalone, 30g of glutinous rice, 1-5g of jujube, 1-5g of ginkgo, 1-5g of chestnut, 1-5g of garlic inside the chicken with the prepared concentrates. |
