摘要 PURPOSE: A method for making a novel Kimchi by adding freeze dried Lentinus edodes powder is provided to relieve bitter taste of the Lentinus edodes. CONSTITUTION: A method for making a Kimchi by adding freeze dried Lentinus edodes comprises: a step of cutting and pickling Chinese cabbage for 16 hours; a step of washing the Chinese cabbage and dehydrating for 14 hours; a step of washing and cutting radish, onion, chives, ginger, garlic, and red pepper; a step of mixing with 5% of freeze dried Lentinus edodes powder to prepare Kimchi filling; a step of mixing Kimchi seasoning containing glutinous rice glue, red pepper powder, salted yellow corvina sauce, salted shrimp, grinded pear, and salt; a step of mixing the Kimchi filling and seasoning to prepare mixed seasoning; a step of putting the mixed seasoning into Chinese cabbage; and a step of maturing at low temperature.
